Laroque-d’Olmes. Évelyne and Sylvain open “Au 64”

Évelyne and Sylvain have opened “Au 64”, avenue du 11 November, in Laroque-d’Olmes. More than a sign it is a number destined to become legendary, that of gastronomic appointments around pizzas. And not just any. Unanimity was reached for the open table on 8 June, but also for the decorations. Her mother and son have left nothing to chance. First, the table. Évelyne has decades of restaurant experience in Ariège, including fourteen, alone, at the head of Pizzas Folies, at the Castillanes shopping center in Laroque-d’Olmes. There, a few hundred meters from “Au 64”, the young girl won all the votes.

Very quickly and during all these years, his know-how, his kindness, his cheerfulness, caught her in the middle. Évelyne becomes the first name linked to pizzas. We don’t go to Pizzas Folies, we go to Evelyne’s. Today, with “Au 64”, you have entered another dimension. The level is high in association with her son, Sylvain. There was the purchase of the house, 64 avenue du 11 November. But also the important work, lasting six months, and the development that follows. The adventure could begin after training in baking with an Italian master.

“In a pizza, the dough is very important,” Evelyne insists. As for the garnish, priority is given to quality, fresh and local products to develop the Savoyarde, the Sicilienne, the Fermière, or even the Reine or the Royale, the Terre et Mer, the Cabri, etc. “It’s pure pleasure, a great pleasure to work together,” confirms this captivating duo. Two great accomplices, the mother at the stove, the son at the service. “It’s really made for this job,” she says. Sylvain is also responsible for planning, live timing and also upstream, in terms of bookings. “We don’t take the customer hostage, we tell him the time he can sit at the table, unless he wants to come earlier and enjoy the bar”, smiles Sylvain. This also applies to take-out orders.
